Oolong teas are rolled, twisted or curled (generally by hand) and oxidized to different degrees. Due to the varying degrees of processing, oolongs fall in a range between a green and black. Most oolongs can be steeped multiple times producing a different flavor and caffeine content with each steep (around 30-55 mg per 8 oz with first steep). Oolong teas can have the body and complexity of a black tea, and the brightness and freshness of a green tea.
